Anyone have a fool proof method for making Pastrami out of packaged corned beef?
I have a couple corned beef flats in the freezer I need to do something with.

Do a search for "fauxstrami" and you'll get 22 threads, we call it Fauxstrami, because although your get a product that is similar to pastrami, it's more of a false pastrami than a real one.

Allow it to cool, refrigerate overnight, chill for 25 - 30 minutes in the freezer, then thin slice on an electric slicer or with a really steady hand and a good knife.

Try it for yourself, read up on pastrami from as many sources as you can, and make up your own mind!
