I either smoke a couple briskets in pans, keeping the juices, or wrap in foil, again keeping the juices, and pouring them over the slices. Trying to guestimate sales for a specific time frame vs simply slicing every brisket as it gets done also. I have found trying to slice to order on a grand scale from a itty bitty kitchen to be impossible.

I do the same with my brisket but it just seems to dry out to fast. I try to slice brisket to order and pull my pork to order if possible. Thanks for the reply
