I'm looking at smoking a turkey and was wondering do I poke holes in the bird before I put it in the brine? I'm thinking it will allow the brine to penetrate the meat better.

Thanks for the help!

I wouldn't poke holes just to be poking holes. If you brine for the correct amount of time the turkey will absorb some of the salt solution and will be salty and moist enough. Some folks will inject butter and other flavorings after the brine, but that's forcing liquid into the turkey.

Poking holes will make the juices run out while cooking, which isn't a good thing. Here's a good resource for turkey brining; http://www.cookshack.com/store/Smokin-Okies-101-Series/Brining-101

Question: Can you brine and inject?

Answer: You don’t need to, if you’re going to inject the brine. Osmosis works for you – so you don’t have to. Now, if you want to inject your own flavorings after the brine, feel free
