HI Fellows !

I happen to be a Cajun from Louisiana living in Magnolia Texas and truly miss sausage made around the Ville Platte, Eunice, Lafayette, Crowley etc. Anyone have a recipe for sausage links from this area of the world I really appreciate having it.

Do you know what type of sausage it is? Like, Boudin, Andouille, etc? That will help us figure out what you are looking for.

The secret to the sausage you mention is long cold smoking. My family is from Ville Platte, Point Blue and Mamou areas (Evangeline Parish) so I think I get what you're saying. The best to me is to cold smoke with pecan or hickory for 3 or 4 days with rest periods each day. For cold smoking you will need to use a cure to prevent botulism and other nasties!
