You use tie downs, welding, screws, nails... same way you hold everything else in place place! Wink

My prefered method is to remove the casters and replace with 3/4" pipe with wall flanges on both ends, The holes on the flanges lign up with the original holes on my prep fridges and in most instances, I then also screw the flanges to the ground! Using this method can also get unit high enough to clear wheel wells if needed using 10" pipes [ IIRC] and half the holes from factory at back of unit... I did my 6 burner oven and deep fryer this way. I really like the extra couple inches higher as I am about 6'1" tall...Keeps me from leaning over so much.
My upright freezer, I simply used a large L bracket from unit into a steel wall stud as I had built a platform over wheelwell for it.
One, I simply locked the wheels, and use angle bracket from side to adjacent counter. Another, I used the legs for the fryer on fridge, and bolted through the prep table next to it[ which is bolted to wall.]
Unless your driving like Joey Chitwood [ stunt driver ] it takes a bit of work or seriously pothole filled roads to be an issue.

I screwed some L shaped sheet metal in the front and on the sides then I screwed two d rings to tie my doors down with a strap. It only took once for my door to open an have coleslaw all over the place

for our prep fridge I used about a 3" screw toenailed through the back wheels into the floor
