Trying a butt on the kettle today . Never done one hot & fast before . Might need some advice from 1Buckie . He ses to be the master of the kettles . Wish I could figure out how to post pics .

Either do a search on here using 'snake method' with 1buckie as author or go over Here and take a look-see.

Just got off that page a bit ago...Liking the results!

Jus' picked up a 9 pound, bone in shoulder...Chucked it in the freezer for now but Marks method is on the Radar for Sure! Cool

I agree, 1buckie is the King of Kettles. I have learned lots from him.

I have also done a butt / picnic roast on a 22" kettle.
I used the snake / fuse method, and it was no problem.








In this case, I had a picnic roast about 8 lbs. Had to trim the skin off and some of the fat.
Scored and then rubbed with a generic rub I found at a bulk food store.






After 11 hours, the thermapen was reading 205°.
I removed the meat, double wrapped with HD foil, and into a cooler with some towels.

Close to 2 hours later, I unwrapped and pulled. It was still very hot, and it pulled very easy.
The bark on this hunk was outrageous!








It probably could have gone for 1-2 more hours.
