Friday I have big cook of 200 lbs (24 butts) for pulled pork. The pit is only 2/3rd full. I need 4 butts for Saturday with no time to cook them. Thinking of throwing them on for the Friday cook. When they are done wrap them in commercial plastic wrap and double file and put them in the commercial fridge. Then on Saturday put them back in the cooker when I'm running beans and such. Take the whole butts from the fridge to the cooker removing plastic wrap and re-wrap in foil for 4 hours at 235°F while I do the pit beans?

I have never reheated like this before. I'm supporting a mission trip and want to feed these awesome volunteers.

Thanks for the advice!

I would pull the pork, put it in foil pans and then reheat the next day.

I would smoke them in a pan, pull bone and pull into chunks...add a 16oz bottle of ice cold water to start cool down and set on cold grill or something that will help dissapate heat, maybe put a fan in front of it to speed process...foil and put in fridge once they sit out, covered, and get to about 140°....a commercial fridge will cool them no problem from that point. To reheat, simply toss back in smoker for about 2 hrs, drain off excess and do final pull!

Things went will guys. I wrapped in foil and then plastic wrap (4 layers) and put them in an Ice bath for a couple hours then the commercial fridge. The reheat process was to take the plastic off and put the foiled butt in a half pan back in the smoker. They were warming a bit slow so I opened up the file and things went great. Folks loved it. Thanks for the input!
