I made enchiladas in my DO recently and they were really good.

I lined my DO with parchment paper.

I started by making 16 tortillias. You could use store bought but home made are better. I made the dough a little dry for the purpose. 2 cups of Masa flour and some water.

I filled each with onion, mushroom, left over hash brown, and pulled pork. After they were all in I poured a can of enchilada sauce (from ALDI) on them. Put some cheese on top.

Baked at about 350 for about 40 minutes.

I'll definitely do this again. The homemade tortillas result in a tamale texture. The Aldi sauce has perfect flavor.
