Hello all!
I've put together a team of my own for a comp the end of august. This is the first time I've run my own team and not been cooking an entry for someone else. We've got tables and pop-up covers, a generator. I'm looking for advice for the other random items that might normally be overlooked and also creature comfort things for hot late august days in Kansas and for someone who will be spending all night with out a camper. We're on a budget also.
What lights do you use? I don't necessarily want a giant halogen work light glaring at me.
Hand washing station?
Do you all take fans to help with cooling and keep flies at bay?
What will I most likely forget?
As always I much appreciate everyone's help and accept it all no matter how insignificant you may think it is.

Debbie and I have everything we need in rolling job boxes since we do not have storage on Bahama Mama.
Here is our check list we use for comps.

I've been thinking about my first competition, and here are a couple of other thoughts, based on my experiences!
Don't forget to take care of food and drinks, hydration, something you can sleep in or on.
The creature comforts, can make or break being at competitions, don't forget something to cook meals on, I did at the first competition I did, now I have a charcoal volcano and dutch ovens / skillets in the trailer, and a propane double burner too.
Plan on eating Friday lunch & diner, and Saturday breakfast, lunch on Saturday is usually taste testing all the turn ins!
I like things I can share with other competitors that didn't bring anything, Brats & onions in a beer bath, and tortilla shells warmed through in some foil, with mustard and ketchup or some salsa has never been refused by folks arriving late on Friday night, to set up and start cooking right away, that bit of feeding friends and competitors for 10 or 15 minutes might be the break they need to settle themselves in for the long night. Other Friday night foods include, chili's, stews and country boils. _________________ Here's a change Robert.

I think just about everything has been mentioned as far as "stuff" to bring. But one thing that helped me (especially at our first comp) was a schedule. I had everything in a spreadsheet as far as by time so I knew what I needed to be doing when, based on the times I came up with during my practice cooks at home. This allowed me to stay focused and on schedule.

Great advice Bedlam BBQ. Every Friday night after cooks meeting Debbie and I sit down and go over times. We log them on the comp sheet and also put them in a phone so we stay on track. _________________ Always remember slow and steady wins the race.

So I did this....
Made a simple Excel spreadsheet in half hour increments and filled out everything I could think of and well...slightly overwhelmed by the shear amount of stuff that I never considered when and how it was going to get done, for four categories, at the same time....
