He got me twice in the same transaction! Dont like to buy my meat there but it was a convenience thing. Went through the butts they had out, wrapped cap down on a foam tray, trying to peek under to see the cap and found one that looked good. got up to the checkout and found out IT WAS $4.39 A POUND! Then I get home cut it open flip it over and the butcher cut the cap all off except for around the edges! Looked like it went through a plainer. SOOoooo what do yous think about capping it with bacon? Anyone ever do this?

Is it just the false cap that was taken or the false cap and th real cap underneath it?

If it's only the false cap, you can cook it as is and there will be enough fat to cook it for pulled pork as is.

If they took both, then you could use bacon or fat back or any other fat laid over the top to render over the meat.

Ahhh...the old "monk cut" butt Wink I personally dont get too worked up about them, I do mine fat cap down anyhow, and often in a pan to catch juices for re-distribution in finished product.. In reality, you got a deal - not paying for fat, but mainly paying for meat!'cept for that $4.39/lb part!

Dang - $4.39/lb??? Ouch! And here I am bitching about $1.99/lb. I talked with my butcher yesterday and he can get me whole piggies for $1.09/lb (average weights are 120#), so I'm gonna get one and butcher it up if I can find someone to split it with. I don't have enough freezer space for a whole one.

I make them like this all the time when the people eating really like bark.

Pork prices suck....I bought a boneless butt a couple weeks back and paid $3.29 a pound....
I almost went through the roof...$33 for a butt.
