Hey All! I shot from the hip and just threw some cheese on the smoker with a home made pellet fueld cold smoker. I think the smoke was too thick and I was over zealous in the amount of smoke. Now the Cheese after 3 hours smells very smokey, but bitter. Will that mellow A LOT over time or will it always be bitter now. Can I trim th outside to get rid of the bitter or should I toss it. We're talking $10 worth of cheese so it's not a major loss, but if it will end up fine in a month or so, I'll keep it.

Bag it up or vacpack it and stick in the freezer for at least a couple of weeks.

DON'T eat any of it until then, because you'll think you have been sucking on a 3 pack a day smokers ashtray, and won't believe anyone should ever smoke and eat cheese.

When you get it out, and eat it in a couple of weeks, (and I mean at least 2 weeks or 14 days), you will wonder why there aren't more people smoking cheese and eating it!

NP, leave it at least 14 days in the freezer, 3 weeks - a month can be better with some things, but it will mellow out to something that was totally worthwhile!

Sorry you took a bite first... been there, done that, didn't like it either!
