How long can you hold ribs for in a cambro before they turn mush. I usually don't hold my ribs vary long but I might have to hold them for several hrs tonight _________________ Lang 60

I have found NOT covering them helps hold them better. Yes, steam will still be in box but not as intense on product.
I have the heated cambro - blower broke but heating element still keeps box warm if opening etc. A foiled/ heated brick or rock may help if opening a lot in a vending situation - if just holding, a couple hours should be no issue IMHO. _________________ Money Maker

I have held full racks of ribs in my Cambro for up to 4 hours without a problem. I keep them in a standard hotel pan, covered with foil. I like to keep them in the Cambro and cut them as I use them, cut to order, as I have found they keep better than kept in the serving trays. _________________ Lang 60

So your putting them in the cambro unwrapped and no foil covering the ribs. I might have to hold them for 4 hrs .
I'm hoping I'll be able have some almost done before I leave and the rest 2hrs after I get there _________________ Lang 60
