I am getting ready to buy a new(used) smoker for our catering tailer. Has been using pellets for the past 4+ years, but now looking at other options. Would love an Ole Hickory or SP, but not in the budget right now.
Has anyone tried this conversion on a Pitmaker Sniper Offset, or similiar offset smoker?
I am looking for a cooker that will hold 35+ butts, but does not need to be babysat for temp control. I am also looking for something that has a very low possibility of grease fires.
Would love some suggestions. Budget is $5K right now

It appears Old Hickory is selling complete kits for this system on E-Bay, and at prices cheaper than you can put together piece meal.
I have no financial interest in this at all- Just an interest in adding this to my rig. _________________ Custom build 150 gallon RF (nearly complete)

After having this system sitting on the shelf for the last three years I finally installed it last week and tested it out the last couple of days and did 550 lbs of brisket and pork butts and what a game changer it is. It worked flawless thanks Mike for putting this post up _________________ A 500 gal. R.F. |

After almost 4 years of HARD use I finally had a failure! My Watlow finally got so gummed up with smoke it quit working. That being said the failure was more on the installer (myself) than the part. My control box is mounted directly on top of my cookers for a number of reasons. The easy solution was to add a plastic cover over the face of the controller. I MAY relocate it this summer during my slow season. I had two extras on the shelf so replacing it was easy peasy.
I did remove the unit for the first time since install to install a new fire-grate and pour some ceramic refractory material into the bottom of my fire box. Everything seemed to be looking good.
Can't say enough about how this mod has changed my life for the better- it's been AWESOME! _________________ BBQMAN

I had a friend recently send a PM message about wiring the controller. As mentioned on the first page of the build controllers are available with a built in relay these days.
If you have one of those units it makes the wiring a bit easier- the input should be 110V from the source, and the N/O output goes directly to the burner. _________________ BBQMAN

Thanks for the help Mike. Getting that burner to fire was a comedy of errors.
I could not get enough gas through the housewife grade fitting and regulator from Home Depot. I thought I ruptured the diaphragm using the fitting off of my forklift with no regulator as I was getting bleed by in the "off" position. I had to call Autonics for clarification on the wiring diagram for the digital controller. It's been two years since I bought it and I couldn't remember if I needed a relay. I had to go to a propane dealer to get the right stuff but it finally fired and I didn't blow myself up or break anything! An HVAC guy I ain't!

Good morning D, and so glad that you got things sorted out!
A few comments and suggestions to others- not all controllers are created equal. Make sure that what you buy is compatible for this need. In most cases vendors do not take back used electronics. Not all regulators are either. Some forklifts run off of liquid LP- NOT vapor such as what this burner needs. Be careful selecting your components, this is a huge safety issue. _________________ BBQMAN

Same here, mine been running a while now no hiccups at all.
Nly thng i would do different is make sure to bu a burner which doesnt have a delayed ignition. |

5 Year update. Wow, has been it that long? Other than the controller failure considering the use this gets I've had zero issues. Only thing different I might have done is to place the control box someplace lower or in the trailer cab, and to have another layer of ceramic insulation between the burner box and side of the firebox. I didn't have room for the added insulation, so it is what it is. _________________ BBQMAN
