hey guys, I will be starting my roadside business here in a few months. I will be holding down a full time job and vending fri-sunday. I am trying to keep my menu simple because I wont have much time for food prep before hand. Please let me know your opinions on selection and pricing. This is my first go at this, I love hearing all of your opinions you guys rock!

Pulled Pork Sandwich will be $6.99
Full rack of Ribs 16.99
Half rack of ribs 10.99

Chicken Dinner ( Chicken and 2 sides) 9.99
Pulled Pork Platter ( sandwich and 2 sides) 10.99
Half Rack Platter ( half rack ribs and 2 sides) 14.99
Full Rack Platter ( Full Rack and 2 sides ) 19.99

I think your full rack of ribs are to cheap. I would sell 3 or 4 bone plates instead of half and full racks, but that depends on where you are from and what people are willing to pay.

that's a good point.

I guess I could just call it a rib platter and do 1/3 racks of ribs.

Don't make anything 99 cents.

If you don't have a supply of penny's folks get pissed when they order 3 or 4 things, and you don't have the change, so why start thing off heading for a fall.

Round here ribs run $20 - $22 a full rack and $12 - $14 a half rack, people will look at the size of the racks, and work out that they should buy a whole rack and split it, rather than two half racks.

On a 3.5" bun your $6.99 could be a touch high, a well filled bun is around 5 Oz of meat, so you are charging $21 for 3 pulled pork sandwiches, but you are selling 1 lb and 6 rolls for $18.00 or $3.00 / 2.66 Oz per sandwich, (if you double the meat and bun you would be at $6.00 / 5.33 Oz sandwich... this is another reason to do away with the extra 99 cents.
