When cooking for a semi large group, do you add some to the pork in the roaster or do you serve it natural?

Personally I want my pulled pork natural and sauce it as I see fit.
So many times someone will sauce something thinking it is great because that is what they like when in fact others may not think so.
I like my pork to first speak for itself, then if someone prefers sauce add it. Wink

Maybe a little rub or some apple juice to moisten it, but sauce is always served on the side--usually several different kinds.

I'll hit mine with a splash of finishing sauce which consists of ACV, salt, and some red pepper flake. I think it amps up the flavor a bit but that's strictly my personal preference. When cooking for a crowd that doesn't know me quite so well, I'll let them do their own sauce additions.

Although once I pre-sauced PP with Roxy's when I served a ravenous crowd of vultures (teenagers). 30 kids went through 130 pounds (uncooked weight) in 36.2 seconds, and they were still hungry Shocked Laughing

I did 7 butts for a work party, sauce on the side and it went really well

I always pull and sprinkle a bit of rub in after pulling....I always serve sauce on the side.

I will sauce if I have to pre cook and vacuum seal the pork if I'm serving fresh I don't sauce

I combine whatever drippings that I have in the foil after resting the butts with some vinegar and rub and season the pork. The sauce is always on the side.
