I went through Hatch a while back and bought a 10 pound bag of dried "Sandia" red chili's. These are absolutely the best reds I've ever enjoyed! Good chili burn with tons of red flavor.
My recipe:
Pull stems and core, shake out seeds
Boil a few handfuls of chilis 20 minutes until tender
Blend using some of the boiled water, enough for a smooth paste
Sieve to remove peels and seeds, Red chile puree is what is left
Use the puree for any desired dish, Over pork or? You can temper with flour/water. Really no need to spice.I love chili dogs-just add a bit of browned ground beef to your favorite tube steak! |
