I'm started looking into buying a vending trailer it will be an 22' trailer with 10'of a porch.
What equipment would you put in the kitchen area if you were first starting out? Not counting on what the HD requires
I do not plan on do any frying so I will not need a hood system _________________ Lang 60

CVAPs, Cold Prep, freezer, refrig, soda fountain, microwave (if you cant cook), steam table, various dispensers.
Pretty limited without a hood. Why a 10ft porch? |

I'm not limited at all. you don't need a hood unless your going to fry food. I believe in the KISS method, keep your menu simple and cook good food.
I don't want a soda fountain and forget the microwave, I have a freezer and a frig if they will fit with what I'm looking at,CVAP cold prep and steam table I'm tring to get some info on
I'm cooking on a 6x12 trailer with 2 smokers on it now and some days I need another cooker when I'm cooking 40 slabs of ribs and 3 cases of chickens that is the reason I need a 10 ft porch _________________ Lang 60

I have a 10' porch with my Lang84 on one side with 2 holding ovens stacked in front of it, the other side has 4' shelving, a holding oven [ used for storing pans mainly] and a 4' reach in freezer which works great for meat prep and chopping etc..I SS fan to TRY to keep things cool. Inside I have a prep cooler, 4 steam tables, sinks, and upper shelving galore! I have a 2 burner flat top with double crock-pot on top of it when open [ for warm sauce and nacho cheese ] I use a SS tool chest lower [ below steam tables ] and more shelving below service window and crock pot area.
Thats after 4 years of adjusting for menu changes etc [ I have a pretty extensive menu vending ] I also have another fridge and freezer in cube van which pulls trailer, and 12 feet of HD storage racks....We can do 1k plates a day at big festivals [ hopefully more this weekend ] with 3 people [ sometimes 4! ] crammed in there I stay outside and cut n chop meat....they only let me in when tables need refilling or they need stock of any kind....They get the A/C....I get a fan _________________ Money Maker

What size and brand of steam tables and prep cooler do you have and how big of a generator are you using? _________________ Lang 60

Are you using food warmers or steam tables because I can't find steam tables for a $100.
I'm looking at a Honda generator right now not sure what size yet _________________ Lang 60

I have 2 (two) of those warmers. They work great! No problems what so ever. |

I'll second that - 2 of these for 3 years now - work perfectly every time. |

I bought a trailer out of Georgia, 40 miles N of the Florida border. I put a Southern Pride SP500 through the back wall and didn't have to leave the room, but to load it with wood and enjoyed the comfort of gas assist for consistent cooks. I sold it when we put two Southern Prides through the wall at my restaurant. If you go with a Southern Pride make sure to get a smoke extractor. Get a big generator. _________________ The lessons are in the customer's criticism. They aren't always right. The rewards are their satisfaction. |

I wish I could afford a trailer like that with a SP 500 but I'll go with what I can afford and I am pricing out a big Honda generator right now _________________ Lang 60

So I left Sunday afternoon to drive to N Georgia to look at a Freedom trailer from Southern Q smokers and trailers I got up there Monday am and spent several hrs going over his personal trailer and another one he just got in and I liked what I saw. His trailer was simple and had just about everything I was looking for. I could have saved myself about 400 miles and looked at a trailer in S Ga but he not only sells them he also cooks out them and builds smokers and that was a plus for me.
After looking at the smokers he builds, If I had the extra money I would get rid od my DW in a heart beat _________________ Lang 60
