I call these Lil Bastards. Others have probably done something similar to this, but I never have leftovers and thought I'd share the recipe. It's kind of a take on ABTs, except that a sausage base is superior to a pepper base. Twisted Evil

Ingredients (makes about 60):
Two packs of brats (about 2-2.5 pounds)
Two packs of bacon
Brown sugar
Sharp cheddar
Horseradish (the filthiest stuff you can find, not the cream)

Cut the bacon down the middle while still in the pack. Cut each bratwurst into roughly seven equal pieces; the idea is to make each piece about 3/8 inch smaller than the width of the bacon slices. Wrap one of the half pieces of bacon around each brat piece, flush with one end of the brat. If you let the bacon warm up a little, you won't need toothpicks. If you do this right, there should be a little "cup" made of bacon on the top.

Put some brown sugar, horseradish, and cheese into each "cup." Don't be afraid to go nuts with the horseradish. It'll balance out the sugar and give them some kick, but it won't be overpowering.

Throw them in the smoker on some foil or a pan with your go-to pork wood. They're very forgiving with time and temp, so cook them with an eye towards how quickly you'll need them. The only thing to worry about is cooking them so hot that you destroy the cheese. When the bacon is done the way you want it, they're done.

Careful: They smell great and people want to dive in, but the brats are VERY hot when they first come off.
