I have a stainless steel commercial grade sink. My question is ..... If I use this as a water pan 3" above my charcoal will it warp all to heck? Should I have some bracing weilded to the under side of it? Its only about 16 gauge thick or so.....maybe a little thicker. this is going into a new R.F. cabnet smoker build.....maybe....... Laughing

If you are going to use it above the actual bottom of the cooker I would think it will work.
If you plan on it being the only thing between your cooking chamber and heat source re-think your idea because it is gonna twist like a roller coaster.

Thanks KAM for the info.

It was going to be the only thing between the fire and cook chamber. Maybe I should have a 1/4 inch thick stainless water pan made and then welded into the smoker...... Would that still warp like crazy? I have 3/8 inch steel plate in the shop......just was looking for something that wouldn't rust on me in a few years.

Hotdog, 1/4" will hold up fine.
When PittMaker first came out their water pan was around 1/8" stainless. They quickly moved to I believe 1/4" stainless because of the warping.
It doesn't take much for stainless to walk when heated.
