Anyone have an old time Easter Sausage recipe ? Also what size casing do they require ? Thanks

Not sure if this is exactly what you're looking for, but here's the recipe I use for Polish sausage

10 lb pork butt
2 C ice water
2 C non fat dry milk
5 Tb kosher salt
1 Tb sugar
1 Tb coarse ground black pepper
2 tsp. cure #1
1 tsp marjoram
6 cloves chopped garlic

I grind the pork with a 3/8" plate, mix the cure and spices in the water, and combine everything in a mixing tub.

I like to use 35mm or so natural casings. I make approx. 24" lengths, tie the ends together with butcher string, and hang in the cold smoker. I've also had good results cooking these on my off-set at around 225 for about 1 1/2hrs.
