Here in Texas, Beef Short Ribs are becoming more a staple on the BBQ scene then ever before. I know a lot of BBQ places that will only cook up a few racks just to say the serve them, but they rather take the cooking space up with brisket, pork ribs and sausage.
How many of you are selling them and is it just on special occasions/days? Also, what are you seeing as your wholesale price?

I'm going to start experiment with many other cuts, I am being forced to diversify due to the current pricing issues, I'm adding items I thought i would never serve.

I talked to a few people and it looks like current pricing is anywhere between $5.50-$5.75. I got a case at Restaurant Depot that was on sale for $5.29/lb. The pricing seems that are going to keep climbing so some restaurants may be dropping these from their menu.
