I have an 8 Kg Sirloin Tip and I have never cooked one this large. I'm looking for a few clues as to how long it will take, and if anyone has any suggestions. I plan on smoking it on around a low heat (around 225 F) and do not want to cook any of it more than medium rare. I'm also curious if I should be injecting and if so, what do you suggest? |
