Hey guys so I have made bacon a number of times and experimented with brining and then wet curing. This time around I wanted to dry cure the bacon and I was wondering if you guys had any tips for me like wether I should be flipping the bellies daily or if it is okay to stack the bellies on top of each other. Also what is a good smoking time and temp for them I have a cookshack commercial electric smoker at work and that is what i use mainly use. Generally I smoke them for about 6-8 hours between temps of 180-200. If you guys had any tips let me know, thanks guys.

No need to flip or rearrange.

I typically roll my bellies up, and wrap them.


Temps,
At those temps, you are actually cooking the bacon instead of adding smoke for flavor.
I try to keep my bacon temps under 100 degrees when smoking so it stays raw.
