That time of Year again...Merry Christmas and the Best of the Holiday Season to All!
Bought a case of North Atlantic Salmon fillets to be Hot Smoked for family and friends...Here are just a few shots of
what we lined up after a twelve hour brine session and ready for the 'fridge smoker...
Got Betsy's attention right away...
And a few pics plated and ready for the table...
And that's what we prepared for Christmas Day Giving...

Naw...Did not forget.
UPS showed up a short while ago claiming that the shipping
address label was ripped off in handling procedure...
Gave the Salmon to the UPS driver...
You thunk he might have damaged the shipping label intentionally?

The Salmon smoked up just great...We delivered one of the bigger fillets to my nieces house where we joined family for Christmas Dinner...Would You believe that the young'ns...
(teens) were the first to dive into the fish?
Devoured just about the whole thing in 30 minutes...Made me a very Happy Uncle .

That's some damn fine lookin' Salmon Tony. I've smoked a couple of those and they're always great.
To bad ya couldn't have gotten Pacific Salmon, far superior.

That's our Signature "Sicilian Olive Salad"...My Mother's original recipe...Been using it with the Hot Smoked Salmon ever since I started. Rave revues.
I will post up the full recipe later...Thanks fer askin' Brother!

Here 'Ya Go, Bugs!
Sicilian Olive Salad
One Pound Ripe Spanish Olives- Pitted and coarse chopped
One -12 ounce can ripe, pitted black olives-coarsely chopped
One - Two ounce can, flat fillets of Anchovies-cut, chopped or muddled
One- Four ounce jar, artichoke hearts-coarsely chopped
Three- Stalks New celery- split length-wise and coarsely chopped
One- Red onion, peeled and thickly sliced
Six-(Or so) Pepperoncini ,(small Italian peppers in vinegar brine.) Coarsely chopped.
Olive Oil, Red wine vinegar, Oregano, fresh ground black pepper-To taste.
Optional: Two stalks-Ripe Fennel (Finocchio) split length-wise and coarsely chopped.
Mix all together and let flavors meddle overnight. As the juices develop, mix occasionally .
Best after second day...
Keep refrigerated.

Yeah...That recipe goes back Generations! Keep in mind that the end yield for this recipe is relatively small...At Holiday time,my wife commonly makes (6) times the recipe to accommodate all the fish that has been prepared...it keeps well in the 'fridge (the cold one ) due to the vinegar/oil base. Glad Ya'll liked the recipe...We'd love to see some pics
of Ya'lls with this paired to some of Your own smoked delights!
