Haven't posted a cook in a long time. Figured I'd journal this quick one to ease back in.

Life has been crazy in last 12 months. Job change plus another baby makes for a busy schedule. This addition brought the total up to 3 boys, all under the age of four...

Two 7# butts on the Weber kettle with fairly simple prep. Injected with apple juice brine and rubbed with salt, pepper, garlic.

I have no clue what temp they cooked at. Had 1/2 unlit chimney in the kettle and added a full lit chimney. Smoked with an interesting mix of cherry and lilac. Lilac is hard to put your finger on, in a good way. I had burned some of it green in the fire pit to see how it smelled. Very strong then but really mellowed once it was properly seasoned. Think I'll be experimenting more with the remainder as it's a fantastic smoke.

Dropped them on at 1, pan w/ no foil at 3, foiled at 3:45, and then seared and pulled at 5:15ish. Thermapen read 197 and probe slid in fairly well. Could have gone a tad longer but I was slicing/chopping this one so it didn't matter. Would have made a perfect slice for a big pork sandwich.

It was honestly one of the best tasting butts I've ever done. Really liked this method and the outcome.


Ready for grill






1hr on.



added apple juice, butter, and b sug to pan



seasoned with 1 part rub to 2 parts sugar before searing




clean bones



the bark was to die for







got a really good smoke ring and flavor with minimal time




chopped up and glazed with defatted drippings, brown sugar, and cider vineagar




Also made a curried squash soup.
-Roast squash and carrots until brown
-Add to sauteed onion, garlic, curry powder, and ginger
-Add vegetable stock and simmer
-Add reduced coconut milk and brown sugar
-Simmer then blend
Looks like baby food, tastes like delicious.






Altogether it was a good day. Hope to get some more smokes up now football season is in gear.[/img][/b]

That's pretty fast ...... Shocked

Everything looks real good.....no ill effects, it seems !!!!

I noticed they're kinda streched out & that may have helped to speed things up a bit.....here's an experiment with that ~~>

Thanks Buckie!

The butts were already nicely trimmed at the grocer. Laid them like that to maximize heat and they really wouldn't fit any other way. Thinking I was in the 325 range with the speed they cooked.

That's awesome!
I never really have a clue anymore what temp the Weber kettle runs at, either ...
I do know that it's always hot enough to cook meat ... that's all that matters. Very Happy

Nice butt(s) gbque Wink Laughing . Very interesting about the Lilac wood. I would have never guessed it's a good smoking wood. Thanks for sharing that, learn something new every day.

Ha! That's the story of my life right now. Having no clue that is...

I'm actually selling my big smoker as I have no time for it. Plus I need the money. If she sells I'm getting a 26" weber kettle to do all my smoking on. Then its hot and fast all the time. Smile
