Just joined in hopes of good exchanges about a smoker build I am getting started and when it's built, about what I'm cookin' in it.
I own a home-built aluminum upright set up for gas or wood, which I've used to smoke about everything, but purchased it mainly for smoking mullet (that's a fish).
I have owned the New Braunful offset pit, which I modified some, but the ol' girl was retired at the scrap yard recently.
Have a Thermador 36 stainless gass grill (No, I didn't spend $4,000 for a grill, I got in on Craigslist for $250)
I also have an open pit of concrete blocks and plywood lid that I recently cooked on for the first time - probably the least efficient smoker you can imagine.
The build I'm looking to do will use a 70-gallon kerosene tank 48" by 26" and a 15" by 42" LP tank as a rear firebox - basically a Diamond Plate type set up. This one I'll be seeking advice on here in the proper forum (pipe to chamber size and number, stack size and placement, reverse flow or tuning plates, etc., so please help out if you can.
