I was asked to cook Paella for a party with expected guest counts around 50 people!!
Of course I jumped on the opportunity I love a good challenge any day
I started with Spanish chorizo

Then cut up all the veggies

I marinated chicken tenders over night in a mixture of tomato paste, garlic, oregano, EVOO, lemon juice and some spice and sea salt. This is my own twist on the recipe and not traditional.

The next day I started with sautéing the mixed peppers

Then added the chorizo

Then cooked the chicken in batches

Added diced onions, peppers and garlic

Added the broth, which was consist of chicken, vegetable, and seafood broth, saffron, lemon juice, Paella spice mix and some old bay mix, and then added 6lbs of rice

Added 3lbs of Medium shrimp that I precooked

Also added some imitation crab had to make it stretch due to budget restraint

Also added 3lbs of sautéed pieces of cod fish and green squash and yellow zucchini (I cooked these separately), and mixed all up

Topped the Paella with crab legs, mussels, peas, garbanzo beans, artichoke hearts, lemon wedges, scallions, 3lbs of jumbo shrimp (precooked also), and fresh chopped Italian parsley.

I also cooked a smaller Paella without the seafood for those who are allergic- sorry no pix
I cooked a lot of ingredients separately in order to reserve room for the six pounds of rice. I didn’t want to crowd the Disc or have some ingredients overcooked.
I have to say it was a great success and I couldn’t have made it without the Disco
There was plenty of food and people took some home (don’t how many people actually showed up). That’s what’s good about rice dishes, they stretch a long way  |
