My dear wife called me from Costco Saturday to tell me they had some of their USDA Prime Beef on sale. She was looking at a Bottom Round which I told her I would pass on and then said "here is a beautiful Prime NY Strip Loin for $8.99 lb." I said grab that!! It usually runs closer to $14.99 lb here. As she eased on through the meat market she said they had some beautiful Veal Chops. We cook with ground Veal every so often but neither of us have ever eaten or prepared a cut of Veal. So we decided it was time to give Veal Chops a try.
I decided on Roasted Garlic Mashed Potatoes and Prosciutto Wrapped Asparagus Bundles as the sides. She was hoping to go see friends and have an afternoon drink at our favorite place so I did as much of the prep work as possible.
Prepared my garlic for roasting....man that makes a house smell good!! Very nice chops, about 1.5" to 1.75" thick seasoned with Olive Oil, Kosher Salt and Cracked Black Pepper. Peggy found me a recipe for a pan seared Veal Chop that had a Portobello Mushroom Sauce cooked in the pan. I altered it to grilled Veal Chops that will finish in the reduction sauce.
I ran the Primo up to 550 and left the lid open for a moment leading up to putting the chops on. I wanted the flame at grate level to lick the chops a little to give me a crusty sear
I pulled the chops of at around 75% of the target temp and let them rest. That left me with a good hot flame to make my reduction sauce. Right in here is where I would normally show you the making of the sauce but I was having a drink with my neighbor, cutting jokes and trying not to cut my finger off.
The Portobello Mushroom Reduction Sauce started with 2 tbs of Olive Oil and 1 Tbs of Butter in a hot skillet. I added 8 ozs of Baby Bela Mushrooms cut in 1/4" to 1/2' thick slices, a good tbs of chopped Shallots and seasoned with Cracked Black Pepper. When the mushrooms were browned up I add 1.5 cups of Chicken Stock, 1/2 cup of a good Cabernet Sauvignon and 2 tsp of fresh chopped Rosemary. That went out to the Primo to start reducing.
Once my sauce had reduced some I added my chops back in to finish. I want the sauce to finish with the consistence of a medium thick gravy. I turn the chops several times to baste them. The smells at this point are fantastic!! The mushrooms were intentionall cut thick to stand up to the high heat.
This was a homerun. My beautiful wife gave me an OMG...that might be the best meal I've ever had. That is why we love to cook!!

Very nice indeed.. You are taking your game to the next level for sure..
I have done a sauce very much the same as the one you prepared though I finished it with some heavy cream.

Outstanding looking veal chops k.c.hawg....I love the flavor of a nice thick veal chop....when I go out to nice resto's I always check the menu for veal chops....gotta love the grilled asparagus wrapped in bacon....washed down with some nice dry red(Cab Sav).....awesome looking meal.  _________________ Horizon Offset (Marshall RD Special)

Thanks to everyone for the kind words. Man I wish I would have thought it was prudent that I try Veal Chops at some point before now. I hate that I've gone 54 years and never tried this!!

WOW, those chops and the whole meal look awesome!!
I kept scrolling back to the pictures and drooling all over the screen
I love veal chops and Costco don’t always carry them. I pick some up whenever I can.
