Wow!! This thing turned out awesome!!! Kind of makes me feel really guilty about taking over a year just to get my first cook in mine... Have you had any concerns or problems with the warming box being over the fire box? does it dry out your meat or keep too hot a temp? |

riseabove50, the warmer holds temps around 150° to 175° while I am cooking in the main chamber.
I have never had any panned food dry out while in there. The top of the firebox is the warmers floor. I have a sacrificial plate tacked in the top of the firebox with a 1" air gap, this plate protects my firebox top and also helps with keeping the temps down to warming temps.

is there a way you would suggest to switch the warming box back and forth between a warmer and additional space for smoking - basically being able to control the temperature dramatically while maintaining relatively the same temp in the main chamber? |
