Got a center cut pork loin and cut it into 2 halves so it could fit into the DO.
I browned the 2 halves in a pan first

Then wrapped them in bacon!

And into the DO they went

Covered and placed coals above and below the DO. I also used a probe thermometer for the pork.

And stopped the cooking when internal temp reached 155 degrees

Sliced after resting for 15 min and topped with mushroom gravy.

Dinner is served Very Happy

Looks great BBcue-z, Im looking forward to spring evenings again, I have quite a few new meals to me that I want to try in the DO.
