I trim very, very little if any. The fat puts flavor and moisture into the butts I think. On occasion when there is a very large glob of fat hanging off, I's cut it.  _________________ Swamp Mama's Hawgs & Dawgs BBQ & Jerky Shack

Thanks. I did some more reading here, and found that some folks just score the fat cap, which is what I ended up doing. I'm cooking 50 lbs of butt tomorrow for a party on Sunday. I'm taking photos of the whole process, then the cook. Will post more here as it's complete. _________________ (2) Home built UDS's

I cut all, or as much as possible off, then inject with apple juice and white vinegar. Butts have plenty of internal fat to keep them moist and the less fat you have to render keeps your smoker cleaner too. JMHO, but what do I know?  |

I cut all the fat/skin off then apply the rub that forms that amazing tastey bark. |
