Hey guys
I am cooking 26 racks of ribs tomorrow for some half rack dinners. I am second guessing the quantity of sauce that I would need.
I use the 3-2-1 ish method and dont put alot of sauce on the ribs during cooking.
How much sauce do you believe I would need for the 52 dinners plus some to add while cooking?
I made one gallon up today.
While on it ... What type sauce do you like with your ribs?
I prefer a tangy sauce with Butts but a spicy sweeter sauce with Ribs. |

According to SoEzzy's catering planner, one gallon is the exact amount for 26 racks of ribs

One gallon should work fine. I did 37 racks last spring with half that much. I just calculated how much I would use if you slather both sides of them like I do competition ribs, a gallon would be about right. Just depends on how much you apply.

I am going to make a little extra today during cook as backup. I thought that a gallon would be okay but some people really like to add extra sauce.
Hoping everything goes well today. I will take some pics. |

A gallon.
I cook ribs for a friends Super Bowl party every year. I make half of the racks straight up dry. And then take a few squirt bottles of sauce. _________________ #3 LIAR

The reason the planner gives you 1 gallon is that at 1 Oz per portion, anything under 128 Oz will give 1 gallon result, anything between 128 persons and 256 will be 2 gallons, etc
If you don't think 1 Oz is enough recalculate at the rate you think will work best, the same if you think 1 Oz is to much.
The planner is based on item supplied by Sam's Club and CostCo for catering amounts! _________________ Here's a change Robert.

Other than being one OZ.how much is one oz of sauce?1/8 cup,more,less?or a shot glass? _________________ Good BBQ is all smoke and beers!

It's the amount dispensed by a 1 Oz pump.
1/128th of a gallon.
1/32nd of a quart
1/16th of a pint
You will find it's a standard sauce pump size, on sale in the bulk goods isle of WalMart near the Ketchup and Mustard by the gallon.
http://en.wikipedia.org/wiki/Shot_glass small shot glass in the US is 1 fluid ounce, the standard is 1.5 fluid ounces and a double is 3 fluid ounces.
It's a reasonable portion, if you have a pump 90% of folks will take one pump of sauce, 6% will take 2 pumps what's left will take more than that. _________________ Here's a change Robert.

I calling BS on that. If the food sucks they'll pump a lot more.

Well the caterers that I talked to before I put down any figures must all be good cooks then!
As I asked 35 or more caterers on this forum and on half a dozen other forums, and all those caterers who expressed a preference said they calculated 1 Oz portions and were rarely wrong!
Of course you are speaking from your experience of BBQ, just as they were talking from their's!  _________________ Here's a change Robert.
