FYI, I finally got around to doing a batch of pastrami this past weekend. Last time I tried it (a year ago), I forgot to steam it and only brought it to 145 in the smoker and of course, it was tough.

This time, I did the soaking and draining and re-soaking to get the salt out, rubbed with yellow mustard and then coated with peppercorns, coriander and the spice packets that came with the corned beef. I got a corned beef brisket flat and a corned beef round. Put both in the mini-smoker and took them to about 145-146 and then into a pan sitting on a rack with water under and foiled. Stuck it in the Gasser to finish cooking (196 before pulling), removed and let cool.

Sliced it up last night (would be really nice to have a meat slicer to get the nice, thin slices here) and tried both the brisket and round and have to say, the round has better pastrami flavor. Both are good, but the round is slightly better. I didn't take note of the grain direction of the round before coating it, so my slices are not perpendicular to the grain, but it is still tender and easy to eat.

If I remember right, you got a great set of knives for your birthday or XMas......Did ya do OK anyway ?

Noticed that several different stores are keeping corned beef in rotation lately....I did some a few weeks ago also

I did get some good knives for my birthday but I didn't take a lot of time and just rushed through it and cut the pieces decent, but not great. Not super even, not super thin, but that's o.k., since it's just for us to enjoy, not to sell or anything!
