I knew after having Denny's carnitas last weekend in Texas, that I was having them this weekend in Missouri.
Pork marinating
How can you go wrong with lard on your first cook
Turkey fryer therm works nice and attaches to the handle well.
Pork added
Good color
Frying up some white corn torts
Plated with some onion, tomato, cilantro and some salsa.
Wasnt too bad, damn sure wasnt Denny's. I cooked the pork just a touch too long. There will be a learning curve on this thing for sure, but thats okay, I like to eat, so Ill keep trying.

TrailerBuilder,I've been looking around, pork, lime juice, salt, can you tell me how much of each?
Maybe I just missed it somewhere.
While I'm asking dumb questions, what do you do with the lard when your done cooking?
Sorry for the silly questions, it's not a very popular New England dish, but I gotta try it.  |

I recycle the lard for at least one more cook. While its in it's liquid form I strain it to remove any carnita bits or other crisp. |

GF, thanks for taking a look and the kind words I used a 4lb pork butt and cut it in 1" or so cubes. 8oz of lime juice, 2 good TBS of kosher salt and 1/2 TBS cinnamon. I let it soak for about 7 hours in the fridge. When we were in Texas, Denny put milk in his mixture too, bout 1/4 cup, I skipped that step on mine this time I always keep around sauce jars and such for disposal of grease, so I just drained the remaining lard in a pizza sauce jar and let it cool and then trashed it. Lard is cheap, so I didnt figure there was any point in saving it. Let us know how yours turn out.
Kevin, thanks man! They were pretty darn good but they were nothing like what Denny made at your house. I know a couple mistakes and Ill make sure to correct them the next time.
Thanks Tonybel They were mighty tasty!! I got my oil to around 350* when I dropped the pork in, it cooled to around 200* and then I got it regulated at around 275* to 300* for the entire cook. _________________ X2 Finished Build

Thanks Denny!! I cant say it was burnt bacon bro, it wasnt that bad, but it was just starting to get a little too crispy. Ill get it right, dont worry!! Yes, I know, I left out the milk I was going to put it in the last couple hours of the soak and got busy in the yard and just plain a$$ forgot it. They looked plenty fine to me. I can't taste a pic so they were right up there with Dennys. All carnitas in a disco have to taste as good as Dennys. His did set a high bar. _________________ Backyarder
