I wasn't sure where to post this. But since I know people use leftover pork and chicken in this dish I figured I'd put it here.

Anyway, I sure would appreciate a good brunswick stew recipe. And I was thinking of cooking it in a dutch oven right in the smoker. Any thoughts on that ?

I smoke a chicken I do pork. I do use the DO to cook in. I have never cooked it in a cooker.

Brunswick Stew
Serves 8
Ingredients:
2 tblsp butter
1 medium onion, diced
2 garlic cloves, sliced
2 15 oz cans chicken broth
1 15 oz can potatoes, diced
Meat from half baked chicken
3/4 pound smoked pork
2 15 oz cans whole peeled tomatoes
1 15 oz can creamed corn
1 15 oz can lima beans
Sweet tomato-based BBQ sauce

Cooking Instructions:
1. Melt the butter and sauté the onions and garlic, stirring frequently, until the onions are translucent.
2. Add the chicken broth, baked chicken, and smoked pork. Increase heat to medium or medium high until it reaches a rolling boil, stirring every few minutes.
3. Add tomatoes and the liquid from their can. Add, corn, potatoes, lima beans & BBQ sauce. Reduce heat to medium-low cover, and let simmer for at least two hours, stirring occasionally.

I just made this recipe. Substituted some Thanksgiving turkey for the chicken. Magically deliscioius! Very Happy
