I have made this many time before, but I never documented it. Thought that I would take this opportunity to do so. Went in the pickle last Friday the 21st and I will be cooking it on Sunday or Monday. No smoke, just freshened/steamed.
The cure
Rubbed
Napping
'Secret' ingredient
Cure for 3.5lbs of beef tongue
3 1/2 T Morton's Tender Quick
1 T Dark brown sugar
2 t Coarse black pepper
2 t Ground ginger
1/2 t Ground cloves
2 Bay leaves, crumbled
1/4 t Ground mace
1/4 t Cayenne pepper
1 t Granulated garlic
1 t Mustard powder
1/4 C Apple brandy

Nope, no need to peel it first, I do the peeling/skinning after it cooks and cools a bit, stuff peels right off I'll post the pics soon-I lent my camera out and forgot to grab the SD card  _________________ ~Joe

Cold water, brought to a boil

I don't have any sliced pics As I stated above, I had lent out my camera and it was sliced and vac packed during this time. Stuff is awesome on a Reuben sammy. Thanks for looking. _________________ ~Joe

I find it amazing that beef tongue is selling for almost $4.00/lb! |

No chit Used to be a cheap cut that I used instead of brisket. Now I get brisket for a lot less per pound, but once in awhile I still like a little tongue action  _________________ ~Joe
