I bought a LEM meat grinder and shipped it just before we left Texas, it arrived today!! Just have to play electrician tomorrow and I`ll be making sausages asap. I have to copy the garlic sausages they had over at Black`s.
We came driving down the highway (at oak hill) and saw this beast in distress. Probably a flat tire or something?
I dived for my camera and took this snapshot. Anyone know who made it? Anyone seen it before? Anyway, it was a thing of beauty!

Here`s some picture from the 2 days we spent with Yoda and Mrs k.a.m. I really, really hope that we can do that again soon!!! We cooked some ribs and ate them along with Mrs k.a.m`s taters, amazing food! Y´all better watch out when Yoda hits the comps with his cooker, now that he is swinging his laser sword again that might actually happen soon
They also cooked a huge brisket and 2 pork butts for the next day. We went over to Yoda`s work and had an amazing lunch with his boss and coworkers. THANK YOU Yoda and Mrs k.a.m for having us over there!
Ribs going into big mommas magic chamber.
These two are in total sync.
Here`s Yoda coming out of the toxic myst. We still had some huge skeeter bites!

Mrs k.a.m brought out the rib snack. They didn`t last long!
Butt time.
The best ribs ever! Tender, moist, just enough sweetness, spicy, money in the bank ribs!

Next day we went to Yoda`s work to eat some more.
That brisket came out fine!!
MMHMM.

Again, thank you so much. Saying goodbye to Yoda and Mrs k.a.m was the hardest thing we did during the trip.

Jan, that was a Great evening and morning at my office I really enjoyed the visit. Monday afternoon at work was solemn day for me knowing that y'all had to head back home.  _________________ Always remember slow and steady wins the race.

Just saw this thread, and I love it!
J.O., my stepfather is from Bergen and currently working there as well. I try and make him authentic Texas 'cue every time he comes here to visit. This last time he brought me a bottle of akevitt.  |

It looks alot like a Klose pit, although the all the stacks on both ends make me wonder. Klose does a huge amount of giant and custom work so maybe it was a special order kind of thing. ???
Altogether it looks like you had a hell of a good time with a bunch of good people. The only thing I would have done different, time permitting, is to have gone to some of the builders' shops. Thanks for sharing your trip. |

Good work J.O. This is one of the best posts I've seen here. I really like following your adventures and also looking into the lives of BBQ folks and BBQ establishments. It's an interesting peek at an American culture that I don't get to see living way up north. |

We actually planned to stop by David Klose and Jambo pits but wanted to stay with friends instead. I guess that we`ll stop by there on our next trip.

Akevitt!! That drink will jump up and bite you bad, nasty stuff. A lot of people drink that over here with christmas dinner and fatty, salt food. Send your stepdad down here and I will give him some Texas Q

AWESOME! love the pics and the stories. The wife and I made a smililar journey last year, and much like you have our minds set to move there someday soon.
Its weird though, how everyone's experience is so different. we didn't have a single thing at Kruez that we liked. But, we loved pretty much everything at Black's, especially the sausage.
we did, however, love Smitty's too. The brisket was unbelievable, awesome atmosphere, and great people. We made two trips there as well!

We stopped at a roadside place up in Chapell Hill on our way from Austin to Vidor. It was really beautiful up there!
We had a brisket sandwich, maaan that was tasty! If you are passing thru up there, go get one.
