Pig Pickin’ Cake Recipe

1 boxed package yellow cake mix (18.25 ounce size)
1/2 cup margarine
4 eggs
1 can mandarin oranges including the juice (11 ounce size)

Directions:
1.In a large mixing bowl, combine cake mix (without the ingredients listed on the back of the box) with the margarine, eggs, and mandarin oranges (including the juice from the oranges).

2.Grease either three nine-inch layer cake pans or a 9 x 11 inch sheet cake pan. The layered version makes a prettier presentation, but the sheet cake is easier to put together.

3.Bake in a preheated oven at 325 degrees for about half an hour for the layer cakes and a little longer in the 9 x 11 pan. The top should be lightly browned, and a toothpick will come out clean when the cake is done.

4.Let the cake cool before making the frosting, or the frosting will slide off.

Pig Pickin’ Cake Frosting Recipe

1 can crushed pineapple with juice (15 ounce size)
1 package instant vanilla pudding powder mix (3.4 ounce size)
1 cup chopped pecans (or other favorite nuts – like walnuts)
1/4 cup flaked coconut
1 tub frozen whipped topping like Cool Whip thawed (8 ounce size)

Directions:
1.Combine the pineapple (including juice) with the dry pudding powder mix and stir well.

2.Add nuts and coconut and stir well.

3.Fold in the whipped topping just until evenly blended with the other ingredients.

4.Frost layers or spread frosting on top of sheet cake.

5.Put in refrigerator to chill and also keep leftovers in refrigerator.
