I'm actually a displaced Texan! Been here in Wisconsin though since 1992.

Being from Texas, I'm used to good BBQ. Sure do miss it!

I'm addicted to smoking meats and sides, and do a little grilling too. I'm looking forward to talking it up here.

Thanks guys.

I should have plenty of pics after this weekend. I'm planning on smoking up some ribs with a potato or beans side on Sunday, and some apple cider brined chicken wings on the fourth.

I'm in the big city of Appleton. Actually, it's just big enough. I grew up in San Antonio and Houston, so I know big cities!

Welcome Curt, I'm in Appleton too. Don't know if you know your way around town yet but there a few off the beaten path places to score some meat. One of the best is Niemuth's on the south side and Hean Meat east of town. I've never had luck with Cedar Creek, but the uninformed in the community swear by them.

Hey great to meet you, and thanks for the market tips.

I'm sure my wife will know them. She's lived here all her life. She's more of the Copp's and Festival shopper, so that's what I've been doing. The butcher at Copp's will cut a roast for you if you ask for something special.

When I lived in Texas, I always got my meat from a meat market. I'll have to check them out.

Thanks for all the warm welcomes in the short time I've been a member here.

I thought I would add some pics from this 4th of July weekend.

Here's a picture of the ribs I smoked on the 3rd. Took about 4 hours to get them up to 190 at 225 degrees. I marinated overnight with a orange juice/Honey based marinade. And I rubbed it the morning of the 3rd with a Honey Rub (by Butcher BBQ). I much prefer the sweet meat over the peppery meat!



And here's a picture of some grilling I did on the fourth. I glazed these with a Honey/Lime glaze and cooked them for about 4 minutes . Damn good too!
