picking up 10 lbs belly today, I have some tender quick that I've used before. Just looking for a good maple bacon recipe and maybe a plain country bacon recipe all usng TQ as cure, gonna split 10lb piece in half and make 2 different recipes. Thanks

I TBS per pound, season with some pepper (I like Garlic) and maybe 1tsp/LB of maple sugar if you want the maple flavor. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

well bacon has been curing for 6 days today, feels pretty firm, some spots not as firm as others. The meat turned really dark, maybe because the recipe I used. Gonna give it til tomorrow night or sunday in cure yet nad rinse off and smoke
recipe as per pound of meat
1TBS tender quick
1TBS brown sugar
1/2 tsp fresh black pepper
1/4 tsp garlic
1TBS pure maple syrup |

| I used sugar maple, started temps around 110-120 deg for an hour no smoke. Raised and held 150 deg with smoke for 3 hours to reach internal of 150. Bacon turned out real smoky and sweet good breakfast bacon |

looks good....we do similar recipie but smoke with black alder or willow. We only smoke for couple hours at most. _________________ Come on in for a Cool one!
