After reading a few recipes on French Onion Soup and taking a look at the Trip to the Grocery Store Thread,,, I was pretty hungery... and came up with this...
I just finished two bowls and I am stuffed:
PS, I used my 12" Dutch Oven, but put it on the stove...Its cold and raining outside...
French Onion Soup- With a Roast
4Lb Roast- Trimmed some of the fat/grisle off
4Large Onions- Sliced 1/4" Thick
4 14.8 oz Cans of Beef Broth
1 Cup Chardonnay
1TBSP of Apple Cider Vinegar
1TBSP Worchestor Sauce
2 TBSP of Chopped Garlic
˝ Stick of Butter
2 TSpn Sugar
***Thyme Rosemary Bay Leave, Salt and Pepper to taste
Havarti or Geuyer Cheese
Croutons
I used my only 12Qt Dutch Oven, on med high heat, add butter, then Garlic, Sugar. Then add Sliced Onions and Saute until Golden Brown, (took me about 20-25 minutes). Add Wine, AC Vinegar, Broth, and Roast. Simmer-Lowest Setting on my stove, until Roast falls apart…
Total cooking time including the chopping was about 4 hrs...
***Season to taste…
Ladle in a bowl, add croutons and cheese…
I can honestly say its the best French Onion Soup I have ever had in my Life... THe best part, Its the First Time I have cooked it.  |

Sorry.. It was eaten faster than a shutter on a camera. |

Bump this baby to the top. Anyone that cares for French Onion soup has to try this. AWESOME!
I wasn't crazy about the way the roast turned out...it was just "ok". The soup on the other hand is out of this world. We order french onion soup every chance we get and this is as good as I've had.
I would be interested to see if it turns out as good cooked without the roast. |

This recipe will work fine if you don't want to add the roast....you get a great French onion soup....

I havent checked this thread in many years.
Glad to see a few people like it.
I have not modified the recipe at all, this is the way I cook it today.
