Hello All...

I finally got around to smoking a tri tip last night. The only one I could find was not that big but turned out pretty well.



Marinated for a few hours...



Rubbed down...



Cooked for about 1.5 hours at 250ish temps, pulled at 133.





Sliced...



Chopped for a sammie...





Topped with carmelized onions, shrooms and cheese...




I am going to use the leftover steak on some pizza tonight...pretty pumped for dinner.

Marinade was soy sauce, worcestershire, EVOO and some mesquite seasoning.

OK, on the Tri-tip, where in the heck is the fat layer that makes these roasts so tender and flavorful. We need to tell all or our local meat folks to "Please leave the wonderful fat cap on our tri-tips.

And they wonder why nobody buys the stuff.

Back on topic, your roast looks tasty. But it's not what I've seen, and tasted hundreds of times. No fat cap, no tri-tip IMO. Cut it off after cooking, not before.

Heck of a rant from a relative newbie, but jeebuz, quit taking all the fat off of our meats please.

**Edit** I'm sorry for pooping on your thread. That TT looks amazing.

I just miss the good ole days, when you could walk into any socal store, and have your pick of beautiful tri-tips, with beautiful 1/4" fat caps on the bottom. You can't beat the flavor all that extra fat provides!

Now I'm down in central TX, and it's difficult to find cryovac TTs untrimmed. I'm just a sad BBQ soul! :/

dude that's on fine looking cook and you guys are killin me with the pizzas. did you trim the fat off of the tip or did the butcher next time leave it on are ask the your butcher not to trim it. the fat is the best part Shocked Very Happy
