One pound of ShellOn Shrimp, medium size (50 to 60/lb), Frozen is ok. Thaw shrimp in water, or if you like, use beer or fruit juice. When grill is good and hot, place shrimp in single layer on grate. They can touch, but don't let them overlap. Add wood chips and close lid. Cook for approximately 15 to 25 minutes, depending on weather, until shrimp are pink/orange and firm. Remove from grill, and put in a bowl of ice water, to stop the cooking. When cool, peel and eat, or use in any recipe that calls for shrimp....ie: scampi, pasta sauces, chowder, etc. Remember that they are already cooked, so add them to your dish at the end, so as not to overcook them. Also, the shells can be simmered to make an excellent stock for later. You can even use the shrimp in your favorite tuna sald recipe, for something quite different. Enjoy
