Just installed some tuning plates in my smoker the other day so I can't wait to see how it reacts now. Preliminary tests show that I now have about a 10 degree swing from one side of the put to the other.

I will be cooking up a breakfast fatty, slab of BB ribs (trying out a new rub), pork butt, brisket, smoked Mac & Cheese, and finally what would a forth be without out some smoked beans.

Most likely Monday I will be doing up some beef jerky.

Three slabs spares, ten yard birds and a twelve lb brisket. Looking forward to a smoke filled day, I don't know what could be better.

are you using all the same kind of wood for all of it? I would think hickory/oak for the brisket but something differnt for the poultry and pork.

Just curious I am new at this.

My first one... 21lbs. Coming along nicely.

Starting to smell awesome. Put her on the hot smoker at 9:30 this morning. If there is a stall point cooking whole pigs i think i`m there, butts and hams are at about 165.
Few more hours...... Razz

Yes many times. My buddies are all hooked on this recipe now. All Ican say is try it some time. I also mist it every now and then with cherry Dr. Pepper. I use mustard, Jacks old south rub, garlic powder and brown sugar. With the misting on top in layers the bark comes out amazing.
