Im looking for some kind of simple dessert recipe that I can do in my D/O,preferably something with raspberries or blueberries in it, or any kind of berries...it could be a cake or cobbler type of thing. I know someone will post a recipe for me....please. _________________ Horizon Offset (Marshall RD Special)

1 stick butter
4 cups fresh blueberries or (24 oz.) frozen (thawed)
2 cups flour
2 cups sugar
1 tsp. fresh grated lemon zest
1 Tbs. baking powder
1 tsp. lemon juice
1 tsp. salt
2 tsp. cinnamon
1 1/2 cup milk
1/4 cup water
Melt butter in a 12" Dutch oven using 10-12 briquettes bottom heat.
Wash fresh blueberries and drain. In a large bowl combine blueberries, sugar, lemon zest, lemon juice, 1 tsp. of the cinnamon and water; stir to coat blueberries. Let rest.
In a separate bowl combine flour, sugar, baking powder, and salt; stir to mix. Add milk and beat until batter is smooth. Pour batter over melted butter -- do not stir. Carefully spoon blueberries over top of the batter -- do not stir. Sprinkle remaining cinnamon over top.
Cover and bake using 10-12 briquettes bottom and 18-20 briquettes top for 45 to 60 minutes rotating oven and lid 1/4 turn in opposite directions every 10 minutes until crust is golden brown.
This is out of Byrons Dutch oven Cookbook.Let Me know if You try it.

Parchment paper is what we use..In a real well season D.O its not always needed. But the parchment paper makes for a real easy cleanup..
Looking forward to seeing the great results.
Right on C.B have fun

It don't get any easier than this...you can use whatever berries you have...I just serve it out of the DO.

Great Grandmother Greene’s Blackberry Cobbler
1 cup flour (self rising)
1 cup sugar
1 cup milk
Mix and pour into a give or take 9 inch Pan
Add fruit on top of mix
Slice up ¾ or 1 whole stick of butter and put on top of fruit and mixture.
Cook about an hour at 375.
Blackberries can at times be bitter use some of the sugar above and cover the berries and let sit for 5-10 mins.
With the butter if using a fruit like apples and the apples look dry add more butter. |
