I have posted mine before on the Catering website. I got my inspection in Feb. I am licensed as a mobile kitchen. Here are a few pics.

Ohhh Ok. Just wondering about smokers in trailers and vending together.
I was told the smoker or cooker has to be NFS approved? Just tryin to get a handle on that.

Wow! you need to stack your images not put them in line lots of scrolling your way.Any how it's a nice looking rig.Do you tow your smoker behind or two vehicles?

I am in the process of building a rack with a ramp that will slide into reciever type hitch on the back of the trailer for the Backwoods smoker. As much as I would like to have a FE 100 inside I do not have the room, or lose the fryer. In the future as the business grows I will upgrade to a bigger trailer to have smokers on board.

Sounds like a good idea, but again, I was told by our health department that any smoker I use to cook food for resale, has to be done in a NFS approved smoker. Have you heard of this in your area?

I am sure every where is different because of the particular HD inspector that u have to deal with. I own a 62 seat restaurant and purchased a concession trailer 2 years ago so I could expand my kitchen area without all the building code BS. I am now trying to purchase another trailer to sell bbq in an area close to my restaurant but on a different hwy. The rules here in NC for my particular HD inspector is that if the cooker is inside the trailer it must be NSF and under a hood and ansul system -if the cooker is located in a screened in area either attached to the trailer or detached on another trailer it does not have to be NSF-fwiw

The FE 100 are NSF. I currently cook on a backwoods and the HD took a look at it and did not have a problem with it. Here in Kansas I have seen people cooking on homemade jobbers that are not NSF. The only thing they wanted was to be cooking under cover, such as EZ UP and did not require screens. Over all the HD was very impressed with my rig.

That's interesting info, because I'm looking a place that would be a great spot. The place is small so it would be take-out only, but again a great spot for breakfast and lunch and a some take out dinner as well.

It does not have the room for a smoker with all the other equipment inside. So the outside rig either screened in or but under cover sounds very interesting and might work. I'm going to check into this somemore, something does sound right or maybe I'm not getting all the info.

Man if I could do this, the rig outside puffin away would attract alot of attention or customers.
