Good looking eats!how do you hold your meats?(ya I said hold your meat).I have a big trailer and a small smoker trailer with an ez up like yours,sometimes it easier to just use the small one but never have came up with a good way to hold the foods in the small rig other than a roaster and in the smoker.

Bean, I agree, the eats look good, It would be nice to see the rest of your settup, show us how you hold hot foods, hope everything is going great with the vending. Jake

I hold the butts in 120 qt coolers. I've taken the temp after 12 hours before and they were still at 188. And i keep the ribs warm in the cooker, after the ribs are done i put them in full size pans covered in foil and just keep the cooker temps around 155-160. The building i vend in front of is an old 1950's firehouse and my family owns it. So i installed a prep kitchen in the back, with 4 bay sink, commercial refrigerator etc. Also i keep the pulled pork warm in an electric water chafer.
