Ribs and pulled pork is what people expect at those.

Find out as much as you can regarding how many vendors, what are they vending, an estimated attendance, it can be a crap shoot.
Then you can reasonably adjust your aspirations to suit.

Menu: well its a ribfest...maybe include chicken and something kid friendly, I would be thinking walk around food.

Good Luck

The Friday crowd will not be large, but will be a good marker to go by. My suggestion would be ribs and chicken(esp white meat). Buy what you can cover the cost of(if it is a 100% loss) for Friday. Make contact with a good local source and make a meat run early Saturday if it looks good.

P.S.---Went back and looked over the flyer closer. Has anyone besides me noticed that that is not even a slab of ribs on a flyer for a ribfest Question Question Question
It appears to be a rib roast with the rib bones "frenched".

Do one or the other, not both unless you have hired help to vend while your trying to compete.
