It is 8:14pm in So Cal and I have begun my first overnight cook with a butt, about 8 pounds. It is 56 outside, the WSM is stabilizing at 232 and the pork is on. Using Stubbs Natural with apple and hickory:

Rubbed up (I just sprinkle on, no mustard)

So, what's the guess when it hits 200?? I am figuring about 8:47am?

my guess is, you'll have an easy overnighter and get plenty of sleep with that wsm runnin. set yr alarm for every 2 hours and it wont be a problem!

It is now 7:25am and I woke once inthe night to see the cooker temp was 247. No need to get out of bed. Love those remote therms.

Now, it is 49 outside, the WSM was bumped up to 268 and the pork is at 173 after almost 12 hours. I wrapped it when I got up (6:17am) and I added a smidge more charcoal.

No pics of the wrapping as I think we all know what foil looks like.

Local Lowes has FREE Stubbs Original sauce with purchase of each bag of Stubbs natural charcoal.

I am looking forward to lunch!!!

I think it might be a late lunch. We'll see, that 170ish area is a stall temp when I do butts, although now that you have foiled it will climb faster. Looks real good anyway, enjoy!

Awesome on the pork butt! Lookin good with thos chips and citrus wedges. Plain and simple, just the way I like it. Now just add a little coleslaw on top of that meat in the sandwich and you are perfection!!!!
