Okay, I've been salivating to do another one of these since the last one turned out so good. I got home later than I wanted but I've got him ready to go.
Twenty-three pounds of beefy goodness.
Mr. Roll out of the cryovac.
Here he is trimmed to 17.75 lbs.
Here's why he trimmed out to 17.75. After I trimmed the neck for stew beef (upper right) SWMBO decided she wanted some steaks out of this one. Three Delmonico steaks in the front out of the chuck eye and more stew beef upper left from the under blade. Took 3 to 4 inches off the neck end.
A nice basic rub that works well with low & slow beef.
Here's Chuck, all slathered and rubbed.
Here he is in his plastic jammies, ready to go back in the fridge overnight.

I know, it's closer to noon but I've been up and busy.
BluzQue: Thanks, updates below and throughout the cook.
charleso: Thanks, you know those "jewels" are going on the grill about 6:00 this evening after the wife gets home.
Sasperillyes: Thanks, sure do love a big ole honkn' hunk o' beef!
Canadian Bacon: Thanks, see below and check back now and again.
Boomer: Thanks, I can't wait to taste the finished product!
H-D: Sometimes the anticipation is better than the realization...but I hope not in this case.
Beertooth: Thanks, when I get a little whiff of the smoke it's smellin' real good about now.
Started prepping at about 7:00. Lit a chimney of Kingsford about 8:00 and put it in on top of a chimney of mixed Stubb's briquettes and Cowboy lump about 8:30. Outside temp 58°.
Here's the Char-Griller ready to go.
Here's Chuck in his new home at 9:00.
At 9:30 the temp is back up...
...and the smoke is looking good. Outside temp 74°.
The breeze kicks up every now and then and the temp will drop a bit. There's been one small spike to 256° when the Sun came over the tree tops and hit the Char-Griller full on. Lowest temp was about 205° at 11:00 when I put in another mixed chimney of Stubb's and lump.
Whew, nearly noon and I need to get a ½ pan of beans going.

Hmm...Chucky seems to have hit a plateau at 151°. I thought I had calibrated this thermometer. I think I'll break out the analogue one for a quick check. _________________ When the girl behind the counter said they

13.5 hours and Chucky hits 165° and is ready to foil.
All foiled and tucked in. Now we wait...
reggae, polock, and charleso : It's a shame you couldn't fly the Concord here. You'd be able to get here before you left home.

3:15 AM Chuck was at 205°. At 3:25 AM he was wrapped in towels and tucked into the cooler for a few hours sleep.
